Pretty in Peach

I've never really made anything pie or pie-crusted related before, and lately I've been seeing tarts everywhere on blogs. Rustic tarts look pretty and simple so I thought, why not give it a try? Plus, I am a new fan of buying fruits and veggies and even eggs from my local farmer's market. It's just down the street and open every Sunday.

So I went out bought a few peaches and fresh eggs. Unfortunately all the peaches there were not ripe yet so I couldn't make my tart until Tuesday.  Apparently if you put your unripened fruit into a paperbag it will ripen faster. I think it worked anyways.

My method to my madness to find out a really good recipe is simply a google search. I do read some food and baking blogs, but I don't want all my recipes coming from their blogs since they're already experimenting and showing off those recipes. And besides, its interesting when you try and google search 'best ever tart recipe.' Ah google and internet, where would I be without you?

Onto the tart recipe... I've adapted this recipe from Jacques Pepin. Mine adaption uses less butter and peaches instead of apples. But this is such a versatile recipe, you could add any pie type of fruit and I bet it would taste just great!

Preheat oven to 400 degrees


Ingredients
1 cup all purpose flour
1/2 cup (1 stick) butter (cold)
pinch of salt
1/3 cup cold water
3-4 medium sized peaches
2 tbsp sugar
1 tbsp brown sugar
dash of cinnamon
1 tbsp flour
1 tbsp melted butter
1 egg slightly beaten


















Steps
1. Chop butter into small pieces and mix in with flour until you have pea sized balls of butter and flour mixture. A pastry cutter (if you have one) would probably work here. I also used a knife to cut in the butter to the flour.
2. Add cold water to butte and flour mixture and stir just until the dough starts to form. 
3. Place dough onto counter and knead 1-2 times until you have a solid ball of dough. 
4. Roll dough into a circular shape (about 1/4 inch in width)
5. Take the 1 tbsp flour, 1 tbsp brown sugar, 1 tbsp sugar and cinnamon and mix. Sprinkle evenly over the dough.
6. Peel and slice peaches
7. Lay peaches over the dough, leaving about an inch around the dough to allow for a crust
8. Sprinkle 1 tbsp over the peaches
9. Brush melted butter over peaches
10. Fold edges of dough to form a crust
11. Brush egg mixture over crust
12. Toss into oven and bake for 25-30 minutes

Cool for 10-15 minutes and then eat it! Yum!
